Black Currant Mocktail

This bubbly, fruity Blackcurrant Mocktail is a great non-alcoholic party beverage. Do you remember drinking Ribena as a kid? This mocktail is essentially a grown-up version with its rich flavor and bubbles – it's a simple vegan mocktail recipe.

Ingredients
  

  • 4 ounces black currant syrup (cordial)
  • 4 ounces soda water
  • 2 ounces apple juice
  • 1 mint sprig (leave a few leaves for garnish)

Instructions
 

Black Currant Syrup (Cordial)

  • Bring 2 cups of black currents, 1/4 cup water, 1/2 cup sugar to a low boil. Simmer for 10 minutes. Strain into a heat safe bowl or jar. Let cool. Refrigerate for up to a month.

For the black currant drink:

  • Build in a glass.
  • Softly muddle mint leaves for about 10 seconds.
  • Pour apple juice and black currant cordial into your glass after adding ice. 
  • Add sparkling/soda water, stir.
  • Garnish with mint and enjoy!
