My friend Nicole is the most brilliant self taught cook I've ever met. From the best pickling recipes, to Sunday lunches to exotic birthday dinners, there's not a dish she can't make. She makes a traditional alcoholic Vermouth every year. And so I knew I needed to recruit her for our non-alcoholic vermouth recipe for your non-alcoholic martinis and Manhattans. We went from a 19 ingredient recipe and paired it to just 11 ingredients (you're welcome) that you may already have in your pantry or can certainly buy at your local grocery store. Use it in your mocktails as a 1:1 ratio for traditional vermouth. Not to be drank neat.For the base you'll need something that mimics cheap white wine. Traditionally, a cheap Pinot Grigio is used as the base, hence white grape juice and lemon juice. Nicole did not think white wine vinegar would make a good choice for our non-alcoholic vermouth but if you'd like to try it, go for it! This is your drink. If you have extra ingredients, there's no harm in trying it.
